The Giraudon family has been working the land and making wine in the Burgundian town of Chitry for hundreds of years. The current generation of winemakers are a sister and brother team, Aurelie and Thibaut Giraudon. The farming is done traditionally, with hand harvested fruit and low yields for maximum flavor concentration. The terroir shines through in these wines; the hillside vineyards are composed of Kimmeridgian chalky marl soil very similar to that of Chablis (which is not even 10 miles away). Fermentation and aging is done in stainless steel and the wine undergoes malo-lactic fermentation. Expect bright lemon, apple, and pear fruit, intense minerality, excellent acidity and some brininess. Perfect for seafood but with enough body to stand up to heartier, fatty foods.
